The company has been named Broad Stripe Butchers because a Master Butcher wears an apron with a broad stripe � the wider the stripe, the more senior the butcher. �It seemed to us an obvious association � highly trained butchers with the finest experience in retail terms, combined with the expertise and produce from the finest supplier to the restaurant trade: now available for the home cook.� Says Gerald Wensley, managing director of Broad Stripe Butchers and its sister company Fairfax Meadow, the UK�s premier catering butcher.

It is much easier to produce gourmet standard meals at home when you have access to the premium quality meats that leading chefs use. All cuts of meat are available on the site, from larder-trimmed sirloin steaks to French-trimmed oven-ready five bone fore-ribs through to whole, oven-ready pheasant, partridge, guinea fowl, quail and Gressingham duck. If a special cut of meat is needed and not already available on the site, just contact the company and Broad Stripe Butchers will be happy to fulfil specific requests.

All the meat is British and as well as adhering to the �Quality Standard� marks from the English Beef and Lamb Executive (EBLEX) and British Quality Assured Pork (BQAP), the company supplies meat under the �Red Tractor� scheme managed by Assured Food Standards and �Free-Range� criteria. It is supplied from carefully selected local farms, spanning the Cornish coast to the Scottish highlands � from farms which adhere to the highest standards of animal welfare and top quality feed. The beef is Casterbridge� beef, where the cattle are fed a natural grain diet and the meat is matured on the bone for a full 21 to 28 days to give a distinctive and traditional flavour. The company ethos of respecting animal welfare and keeping food miles to a minimum is inherent in all Broad Stripe Butchers� products.
