Speciality egg producer Clarence Court has commissioned celebrated chef and food writer Mark Hix to step back in time, to create four retro recipes using eggs laid by their traditional breeds of hens.
Available from the website - www.clarencecourt.co.uk � the simple yet luxurious dishes are inspired by the Clarence Court range, which includes Old Cotswold Legbars, Mabel Pearman�s Burford Browns and pearly white Gladys Mays Duck eggs. Reminiscent of the eggs found on country tables in the 1950�s and 1960�s, the retro dishes are the perfect way to enjoy the eggs� unique flavour and texture.
Home cooks can show off their foodie credentials and impress friends with yester year recipes such as �Curried duck egg� and �Lles Flotants (floating islands)�. Alternatively, why not try your hand at mastering the famous classic, �omelette Arnold Bennett�, or put the spark back in to Sunday brunch with �Oeuf en Gelee�.
Highly regarded in his profession, particularly for his modern approach to British food, Mark has cooked at some of England�s most prestigious restaurants including The Ivy and Scott�s, and now runs Hix Oyster & Chop House in London and sister restaurant, Hix Oyster & Fish House in Dorset.
