Introducing Sea Buck Tonic, a wild infusion of bright sea buckthorn berries, the untouched and native flavour of quinine and fresh Cornish spring water.
Sea Buck Tonic was created by Cornish duo Pablo and Charlie in their hometown of St Ives. Inspired by the sea buckthorn growing against the odds on the wind-blown, sea-sprayed dunes of Gwithian, Charlie and Pablo set themselves a mission to create a natural tasting tonic water that showcased wild flavours.
A Real Tonic
In part paying homage to the authenticity of the word 'tonic' – having the property of restoring to health – Charlie and Pablo set out on a mission to create a 'real tonic'.
Tonic water has a flavour profile that comes from quinine, an alkaloid found in the bark of cinchona trees. Various tonic brands over the years have diluted quinine with chemical compounds, and this has translated into an artificially bitter taste.
Recognising the shift towards more natural products in the food and drinks industry, Charlie and Pablo felt compelled to create a tonic that was authentic. Fuelled by quinine that is naturally extracted and infused with sea buckthorn, the result is a golden-hued tonic: trees aren't transparent, so why would your tonic be?
Future Visions
Sea Buck is rooted in Cornwall's coastline. It was a chance encounter with a sea buckthorn bush down a hidden path en route to the surf that caught Charlie's attention. Pablo's original recipe used foraged berries from these Cornish shores – and so Sea Buck Tonic was created. Their vision for the future is to start incorporating Cornish-grown berries. They are collaborating with Seth Pascoe, a sea buckthorn enthusiast and grower based in Lostwithiel, and have started the conversation to involve Seth in the process.
Sustainability
As surfers on their native shores of St Ives, sustainability is important to Charlie and Pablo. Sea Buck tonic is handcrafted in Cornwall and bottled in Birmingham, making the production process 100% local and UK-based.
