How to make a Boo Chi kombucha cocktails and mocktails
Boojito – Low and No
Ingredients
- 300ml Boo Chi – Fresh Mint to Revive
- 60ml white rum (any brand)
- Juice of 1 lime
- Small handful mint leaves, plus extra sprig to serve
Method
- Muddle the lime juice, and mint leaves in a small jug, crushing the mint as you go – you can use the end of a rolling pin for this. Pour into a tall glass and add a handful of ice.
- Pour over the rum, stirring with a long-handled spoon. Top up with Boo Chi fresh mint to revive garnish with mint and serve.

The Original - Go For It" – Low and No
Ingredients
- 300ml Boo Chi – Original to Balance
- 50ml Vodka (any brand)
- Squeeze of Lemon Juice
- Selection of Fresh Berries (recommend blueberries, strawberries and pomegranate)
Method
- Fill a highball glass or other large cocktail glass with crushed ice
- Pour in vodka and a squeeze of lemon juice and stir
- Pour the original kombucha over the top and garnish with a selection of fresh berries

Ginger Thistle – Low and No
Ingredients
- 200ml Boo Chi - Fresh Ginger to Reignite
- 50ml vodka (any brand)
- Squeeze of fresh orange
- Handful of crushed ice
- Garnish with a slice of fresh ginger
Method
- Mix together the ginger kombucha, vodka, orange juice, and crushed ice.
- Add all ingredients to a tall glass (high ball) and garnish with a slice of fresh ginger and glass straw to serve.

Strawberry Negroni – Low and No
Ingredients
- 125ml Boo Chi – Fresh Strawberry to Revive
- 50ml Gin (any brand)
- 25ml Campari
- 10ml lemon juice
- Strawberry/Lemon Wedge to garnish
Method
- In a large glass mix together the gin, Campari and lemon juice, add ice cubes and pour fresh strawberry kombucha over the top gently stirring as you go. Garnish with a lemon slice/wedge and one fresh strawberry.

Ginsing Mezcal – Low and No
Ingredients
- 150ml Boo Chi – Korean Ginseng to Boost
- 50ml Mezcal (any brand)
- 1 grapefruit and lime juice
- ½ tsp honey or agave (any brand)
- Coarse Salt
- Lime to garnish
Method
- First squeeze both the grapefruit and lime juice into a shaker and mix together, then add the mezcal and honey or agave, add one ice cube and shake until cold.
- Rim the glass with salt and add one ice cube to the glass (this isn't necessary if you don't want to pour over ice)
- Pour in the mescal and top up with Korean ginseng kombucha
- Garnish with any herbs and a lime slice

Original spice – Low and No
Ingredients
- 300ml Boo Chi – Original to Balance
- 50ml Vodka (any brand)
- Squeeze fresh orange
- 2-4 drops orange bitters
- Orange slice and cinnamon stick, for garnish
Method
- Fill a highball glass or other large cocktail glass with crushed ice
- Pour in freshly squeezed orange juice, vodka and stir
- Top off with the original kombucha, a few drops of the bitters, and garnish the glass with an orange slice and cinnamon stick.
Turmeric Fizz – Low and No
Ingredients
- 300ml Boo Chi – Turmeric to Brighten
- 50ml Gin (we would recommend spiced Ophir)
- Slice of orange and ginger to garnish
Method
- Fill a highball glass or other large cocktail glass with crushed ice
- Pour the spiced gin and also the kombucha directly into the glass and stir
- Garnish with orange

About Boo Chi
From actress with crippling anxiety to Boo Chi kombucha founder via a yoga retreat in Sri Lanka
Many people are obsessed with kombucha and its health-giving properties are well-documented, but for Eaoifa Forward discovering the drink caused a complete lifestyle change.
Eaoifa founded Boo Chi Kombucha in 2018 after the drink dramatically changed her own health and well-being, causing her to re-think her whole career.
The former actress had had some intense acting roles, including the lead in a very dark feature film. But she had crippling anxiety and so in 2017 took a break from acting, having worked and lived in London for 15 years. She travelled to Sri Lanka to work with a yoga and meditation teacher. It was here she was introduced to a “magical” traditional drink called kombucha.
Kombucha is fermented tea and it's packed with the good stuff including vitamins B6, B12 and C, acetic acid and enzymes, so it's an amazing tonic for the body and mind and will give you a natural boost in energy.
“I had hit burn out, and my anxiety was at an all time high. I thought there has to be more to my life than this and the kombucha lifted me so much as the gut is connected to the head,” she says.
The tonic mentally and physically revitalised and energised Eaoifa in a way she hadn't experienced before, and she wanted to know why.
Fast forward to today and Soil Association certified organic Boo Chi kombucha is made, bottled and packed in a 1000 sq ft unit at Seale Hayne in the heart of the Devon countryside.
It's close to where she grew up, and to the home she shares with her partner Marcus and their 18 month old toddler, Jack.
The business currently has 4 sides, Boo Chi kombucha 300ml ready to drink bottles and 19L Cornelius kegs: a pop-up travelling bar, home brew kits which make a fantastic gift anytime of the year and workshops which are hosted at the micro brewery.
In 2022, her turnover was £120k and the company remains independently owned, with anything made invested back into the business.
Eaoifa says: “I started the business as I was so passionate about how this drink made me feel and wanted others to experience it too. When I started researching gut health and finding out that 90% of serotonin (the happy hormone) is made in the gut and that it's also known as our second brain, it made sense that this drink rich in beneficial acids (good bacteria), enzymes, vitamins b6, b12 and C was making me feel the way it did. I am also extremely passionate about creating a truly authentic kombucha meaning that nothing has been altered i.e. pasteurised, killing all the good bacteria and yeast to give a longer shelf stable product.”

What is kombucha?
Boo Chi kombucha is a mildly fizzy, fermented tea that has been consumed for thousands of years.
It's made by adding specific strains of bacteria, yeast and sugar to black or green tea and then allowed to ferment for a week or more, During this process, bacteria and yeast form a mushroom-like film on the surface of the liquid which is a living, symbiotic colony of bacteria and yeast, or SCOBY, and can be used to ferment new kombucha.
During the fermentation process acetic acid and several other acidic compounds, trace levels of alcohol and gases that make it carbonated are produced.
Bacteria also grow in the mixture which may have a probiotic function which means they are good for your gut and can improve many aspects of health such as digestion, inflammation and weight loss.
Antioxidants are also present in kombucha which are good for your health. Acetic acid in kombucha can suppress the growth of undesirable bacteria and yeasts.
