The Italian Job � the secret ingredient revealed at The Undertaker
Bottarga, the �secret� ingredient behind many classic Italian dishes will be explored during a sumptuous degustation event at The Undertaker on Thursday 29th March. As part of the 2007 Melbourne Food and Wine Festival four of Melbourne�s top food, spirit and wine experts will present a tasty tutorial focusing this rare, but simple Sicilian delicacy.
The degustation experience hosted by Monte Hudson and the fine food experts at Simon Johnson will be matched with cocktails by The Undertaker�s �Spiritual Leader� Mick Formosa (voted Australia�s best Bartender three years running), and Victorian wines carefully selected by David Kappadais (former Sommelier Melbourne Supper Club, European and 2003 Victorian winner Melbourne Supper Club Tucker Seabrook Wine List of the Year award.)
Bottarga (dried fish roe) comes from eggs of the finest quality tuna or blue mullet, which are pressed and dried under salt. Despite being expensive, it is sometimes called the 'poor man's caviar'. It is an essential ingredient to lift your cooking to authentic levels � Italian mamma style! Monte will explain the history and usage of Bottarga, providing tips on how to maximise its flavour in your own cooking.
