Chemist-turned-master distiller John Hall was the first to ask the question, why not apply nature's genius to gin distillation? From his early 20s, Hall always wanted to be a distiller. He had a degree in chemistry and an obsession with flavour. His first tour at a whisky distillery inspired him to pursue his passion. He was fascinated by how intricate processes created complexity in the final liquid.

How to taste Aureus Vita
Before tasting Aureus Vita, chill the gin in the fridge for ten minutes, (“cellar temperature”). Use a small wine glass or a tasting glass if you have one that has also been chilled in the fridge. At 61.8% ABV, cellar temperature is the correct way to meet this gin for the first time.
Pour 25ml. Restraint is rewarded here.
Take in the aroma from a distance. Let the aromas come to you rather than going to them. Juniper and walnuts first, then pine and something darker beneath.
Sip slowly. The strength will announce itself. Let it. The alcohol is the vehicle for everything that follows.
-Take three long breaths in through the nose drawing the aroma into your nose and mouth.
-Then take a small sip. Let it coat your tongue and then fall away without even trying to taste it.
-Take another sip and do the same, maybe holding it slightly longer.
-Then take a third sip and really let it coat your mouth, discern flavours and sit with the finish. Which will be very long.

They need to acclimatise to it before you can really draw out the individual flavours.”

Then make a Martini. Precisely measure 56.5ml Aureus Vita and pour into a cocktail shaker, add 35ml Dry Vermouth, gently add ice, and slowly stir. By adding the gin first before ice means that you can truly enjoy the sequencing of flavour when you drink, as the botanical oils can slowly unfold rather than be broken harshly. Tasting Notes
Nose: A short hit of savoury juniper and walnuts, developing into liquorice and pine, finishing with fresh berries and ginger.
Palate: Earthy yet smooth juniper with hints of pine, evolving through liquorice and cinnamon with touches of peppercorn. The finish opens into a balanced explosion of pine, citrus and berries with a delicate whisper of ginger.
Finish: Long, dry and layered, with lingering notes of pine, citrus and blackcurrant.
