Songbird Bar Launches New Spring Menu: Celebrating Western Australia's Native Birds

Perth, November 2025: Songbird bar at The Ritz-Carlton, Perth has launched a new spring cocktail menu that continues the bar's celebration of its namesake. In keeping with Songbird's ethos, the new menu draws inspiration from Western Australia's native birds, their beauty and character, brought to life through a refreshed collection of inventive cocktails and locally inspired dishes.

The cocktail menu showcases eleven signature cocktails, each telling the story of a spirited bird, its diet, culture or habits. This is conveyed through a creative blend of local ingredients and artful presentation that brings to life the playful, curious and colourful nature of Australia's birdlife.

Each cocktail is complemented by a paired dish from a new food menu that blends Asian influences with local cuisine for the perfect pairing.

The Red-Browed Finch, known for its sociable nature, inspired a sparkling aperitif-style cocktail of Tanqueray London Dry Gin, Campari, basil, berries and Prosecco, light, elegant and best enjoyed in company, perfectly paired with a cheese or charcuterie board of the finest Australian products – from Kangaroo and anise myrtle to wagyu bresaola and Barossa bark.

The Crimson Rosella is as bright and radiant as the bird itself, drawing on wild hibiscus to echo its vivid plumage. Tropical, joyful and full of flavour, the cocktail combines Ratafia Rossi, peach wine, passionfruit and hibiscus floral aperitif, best enjoyed alongside the Cervantes Rock lobster and prawn bun with smoky tomato emulsion and yuzu citrus.

The Superb Lyrebird, inspired by the bird's talent for mimicry, is a translucent concoction filtered through camel milk, which hides a depth of flavour in a nod to the bird's ability to disguise sound.  while the Willie Wagtail brings a playful edge with a tequila-based cocktail that pairs coconut with the rare citrus of bergamot.

Beverage & Bars Manager Marco Barsotti says the new menu is a true team effort. “Teamwork was the foundation of this menu. Our entire bar team was involved, from brainstorming and concept creation to flavour pairing and fine-tuning the final recipes. Everyone contributed ideas, and together we refined each one into something balanced, creative and appealing for every palate.

The new food offering mirrors the creativity behind the cocktails, blending Asian influences with local Western Australian produce. Menu highlights include Australian oysters with blood orange vinaigrette, and grilled Shark Bay scallops with buttermilk and finger lime.

Every element of the new menu has been designed to celebrate artistry and place. Perth ceramicist Elvira McKenzie created bespoke vessels for the Sacred Kingfisher cocktail, while the menu features watercolour illustrations by Clare McCartney, a Sydney-based artist originally from Perth. Her vibrant depictions of birds and botanicals bring the menu to life, capturing the beauty found in the little things.
