Accor Launches Table for - a New Dedicated in-House F&b Group Redefining Hotel Dining in the Pacific

Accor, the largest hotel operator in Australia and New Zealand, has announced the launch of Table For – a new in-house food and beverage group designed to set new standards in culinary experience, creativity and commercial performance. Its first venues, launching in November, include a cocktail bar and an all-Italian bar and dining room in Sydney's CBD, followed by the debut of Flaminia at Pullman Quay Grand in collaboration with Giovanni Pilu.

With a portfolio of more than 440 restaurants, bars and cafes  in the Pacific, Accor has long been at the forefront of hotel hospitality. Table For builds on this foundation with a focused investment in culinary innovation and guest experience, shaping restaurants and bars that are creatively led, operationally sharp and culturally resonant.

Operating as a full-spectrum group, Table For will unite internal experts across culinary, operations, design and guest experience, supported by select collaborators including hospitality luminaries Stefano Catino and Vince Lombardo of the Maybe Group and earned-led culture agency Example. 

The group's remit spans the evolution of existing venues and the creation of new hospitality concepts across cuisines, occasion and audiences – all shaped by guest insights, local relevance and global best practice.

The group is led by Creek, whose two-decade career spans three continents and leading roles in some of the most globally recognised hospitality operators. He is joined by Chris O'Connor, a former chef and senior operator with over 25 years' experience across large-scale portfolios; Jenn Pride, a guest experience leader known for landmark venue launches at Merivale; and Culinary Director Rosy Scatigna, a globally trained chef celebrated for her creative and technical skill.

Stefano Catino and Vince Lombardo - the creative forces behind Maybe Sammy, a perennial on The World's 50 Best Bars list and one of Australia's most awarded cocktail destinations - will lead beverage innovation and hospitality for the Table For portfolio, alongside alongside acclaimed winemaker and sommelier Shun Eto. In an exclusive arrangement with Accor, this marks the first time the duo has partnered at scale with a global hotel group, bringing their internationally lauded craft, theatrical service style and deep industry influence to reimagine bar culture across the portfolio.

Example, led by founders and hospitality marketing heavyweights Andy El-Bayeh and Rebecca Jarvie-Gibbs, will support Table For across strategy, brand development, design direction, marketing and PR. The agency's multidisciplinary collective of strategists, designers, PR specialists, interior collaborators, and music and culture experts will work in sync with Accor's in-house team.

Importantly, Table For will not only service Accor-managed properties - it has been designed to support the group's wider network of owners, developers and franchise partners, delivering scalable, high-performing F&B concepts across a diverse range of markets and asset types.

Table For builds on Accor's recent momentum in redefining hotel dining, with standout openings and collaborations across the portfolio. Sofitel Sydney Wentworth's $70 million transformation introduced a sophisticated dining precinct featuring four venues by House Made Hospitality - Tilda, Bar Tilda, Delta Rue and Wentworth Bar. Together with its lifestyle entity, Ennismore, the fastest-growing lifestyle and leisure hospitality company, Accor is rolling out headline hospitality concepts across Australia - Hyde Melbourne Place, the new Mondrian Gold Coast, and the soon-to-open 25hours Sydney The Olympia, which will be home to the Mulwray Bar and the Sydney debut of London's acclaimed The Palomar under Culinary Director Mitch Orr.
