Sydney, Australia – September 3, 2025 — This December, Park Hyatt Sydney unveils a series of festive dining experiences that celebrate the magic of the season. Overlooking the Sydney Opera House, Executive Chef Tyson Gee presents menus that honour festive favourites through an Australian lens, pairing seasonal produce with timeless traditions.

Christmas By The Harbour

On Christmas Day, The Dining Room and The Living Room will present a five-course menu (from AUD 425 per person) that starts with a platter of Sydney's finest seafood featuring freshly shucked oysters, sweet prawns, tuna and kingfish, followed by glazed Berkshire ham, caramelised with festive spice. The finale is a reimagined mango pavlova with rice pudding and pink peppercorn, a dessert that captures the vibrancy of an Australian summer. Beginning with a glass of NV Taittinger Champagne on arrival, each course is thoughtfully composed to feel celebratory yet distinctly local.

“Our vision was to capture the flavours of a harbourside Australian Christmas,” says Executive Chef Tyson Gee. “Guests will enjoy seafood at its best, from fresh oysters to sweet prawns, paired with tropical fruit accents and festive touches like glazed Berkshire ham and roast duck. Every dish has been imagined for a harbourside Christmas celebration.”

The celebrations extend throughout December with a Christmas Afternoon Tea from December 1 to 24, featuring savoury morsels such as braised turkey pie with cranberry gel, prawn cocktail with Marie Rose, followed by delicate sweets including a gingerbread and salted vanilla bûche de Noël and a chocolate-hazelnut bauble. Afternoon tea is presented on a Harbour Bridge–inspired tiered stand, from AUD 95 per person.

For private gatherings, bespoke festive event packages are available from elegant two-course dinners featuring chilled Yamba prawns and roasted turkey breast, to a summer barbecue on the terrace with smoky lamb cutlets and spiced tiger prawns served against the backdrop of Sydney Harbour.

Festive Sips

Created by head mixologist, Kevin Botte, guests can expect creative cocktails available throughout December. Crafted to celebrate the season, highlights include the Christmas Negroni, featuring homemade lemongrass cordial, Autonomy orange liqueur, Hickey London Dry Gin, and Noilly Prat; the Christmas Cocktail, a bright mix of Brix white rum infused with seasonal stone fruit, fresh lime, Angostura bitters, and a white chocolate and red gum salt rim with Mezcal Vida; and the warming Christmas Mulled Wine, blending white wine, lime and vanilla cordial, orange juice, and seasonal stone fruit. For those seeking a non-alcoholic option, the Christmas Mocktail combines agave and hibiscus with Blå Tea, garnished with fresh fruit, perfect for toasting the season in style.

A Magical New Year's Eve

On New Year's Eve, The Dining Room will host a two dinners. Those looking for an early dinner will enjoy a three-course menu (from AUD 495 per person), while the late seating presents a five-course journey (from AUD 1,450 per person) that begins with chilled Western Australian marron, delicately dressed in a bright carrot, orange and anise sauce, continues with a perfectly marbled Rangers Valley 7+ Wagyu striploin, and concludes with a Valrhona Kidavoa chocolate creation layered with banana and passionfruit. For exclusivity, The Dining Room offers a private dining room, The Study accommodating up to 16 guests at AUD 20,000 that includes a magnum of 2014 Larmandier-Bernier 1er Cru Terre de Vertus Blanc de Blancs Champagne.

For a more intimate celebration, The Living Room offers a four-course late dinner seating (from AUD 800 per person) in addition to a long table experience for up to 10 guests (AUD 6,400) that includes a magnum of 2014 Larmandier-Bernier 1er Cru Terre de Vertus Blanc de Blancs Champagne.

Guests seeking a vibrant celebration can head to the Rooftop Party, where the night unfolds under the stars with free-flow Champagne, wines, and spirits. A live station rotates hourly, offering everything from sizzling yakitori and decadent caviar to indulgent desserts, while roving canapés are served throughout the evening. With only three exclusive cabanas available at AUD 10,000 each, the rooftop presents one of Sydney's most sought-after vantage points to welcome 2026. For those looking to join the celebration, standing tickets are priced at AUD 1,100.
