As the UK marks International Red Wine Day and Cabernet Day on Friday, August 28th, Cow & Sow is spotlighting its exclusive Cow & Sow Malbec 2022. This unique wine, available only in the restaurant's locations, is a story of passion, partnership, and a shared commitment to sustainable winemaking.
Cow & Sow Malbec 2022 is a bespoke blend of 60% Malbec and 40% Cabernet Franc, a formula developed by the Cow & Sow's team to complement their signature sharing steaks perfectly.
Mark Warburton, Founder of Cow & Sow, elaborated on its creation: "I came to the team wanting something truly unique, a restaurant-exclusive wine. It clearly had to be Malbec, but we wanted it to be a Malbec with intense depth of flavour, character, and complexity. We chose Wildeberg as our winery partner, not just for their exceptional produce, but also for their commitment to sustainable agriculture, which perfectly aligns with the Cow & Sow's B-Corp status. With the expert guidance of Daniel Whiskin from Boutinot Wines, and after trying a few different blends, we chose to blend the Malbec with Cabernet Franc that had been aged in Austrian oak for up to 20 months. This blend had everything we wanted: the freshness of fruit, powerful aromas, structured tannins, and a complex, evolving finish. A wine that's wonderful on its own, but even better with a Rib-eye, Tomahawk, or Porterhouse steak."
The wine is crafted in collaboration with the renowned Wildeberg vineyard in Franschhoek, South Africa, which was purchased by Boutinot Wines in 2018. This partnership was a deliberate choice, driven by a shared ethos. Wildeberg, whose name translates to 'Wild Mountain,' conserves 90% of its land for its wild heritage, allowing the native Fynbos bushland and wildlife to thrive. This dedication to sustainable agriculture resonates deeply with the Cow & Sow's own B-Corp status.
The result is a powerful yet fresh wine with structured tannins and a complex, evolving finish. While exceptional on its own, it truly shines when paired with a Rib-eye steak or other premium cuts. The restaurant has already seen over 2,500 bottles of this exclusive wine sold in the last year, a testament to its popularity among diners seeking a unique wine experience.
