This autumn, Brooklands by Claude Bosi launches Claude & Co at Brooklands, an exciting new four-hands dinner series celebrating culinary innovation and international talent. Hosted at The Peninsula London's iconic rooftop restaurant, this exclusive collaboration brings together world-renowned, Michelin-starred chefs from around the globe for an unforgettable dining experience.
Bonded by their culinary accomplishments and dedication to showcasing the very best produce, Claude Bosi has invited chefs he most admires to collaborate in the creation of a one-of-a-kind menu.
Bosi X Straker's Best of British Game
The first event in the series will take place on 16th September, featuring renowned British chef Thomas Straker collaborating with Chef Claude Bosi to present a six-course tasting menu celebrating the very best of British game.
Renowned for his charismatic flair and digital presence, Thomas Straker, has redefined modern culinary stardom. Though his foundations were laid in the kitchens of Michelin-starred establishments such as The Dorchester, Dinner by Heston Blumenthal, and Elystan Street, it is his engaging presence on social platforms that has captivated a global audience. Straker effortlessly bridges the world of fine dining with the dynamic realm of social media. He currently helms his celebrated restaurant STRAKER'S in Notting Hill and recently opened ACRE, a casual restaurant nearby. With STRAKER'S NYC set to open later this year, he is further cementing his place among London's most compelling culinary figures.
Dynamic Dinner Experience
Upon arrival guests will be greeted by Deutz Champagne and canapes as they sit at tables designed for parties of two and four and adorned with bespoke floral arrangements by Flowers by The Peninsula London.
Throughout the evening, the chefs will alternate courses, with standout offerings with each course a celebration of their individual philosophies, marrying bold innovation with appreciation for tradition. Complementing the menu, a series of meticulously selected wine pairings by The Peninsula London's Director of Wine, Melody Wong will enhance each dish with elegant precision. Together, the experience promises a symphony of taste, culture, and impeccable hospitality.
Two more dates are scheduled: on the 2nd October, three-Michelin starred Chef Norbert Niederkofler brings his visionary approach that combines sustainability, biodiversity and seasonality from the Italian Dolomites to Brooklands. Brooklands by Claude Bosi is a spectacular rooftop restaurant that soars to new heights, celebrating the golden era of British aviation and motorsport. Named after the iconic Surrey racetrack, the birthplace of British racing and flight innovation, the restaurant showcases an exceptional collection of artefacts, including a vintage Napier Railton race car and a striking scale model of the Concorde aircraft suspended from the ceiling. The menu, crafted by Chef Claude Bosi and Chef de Cuisine Francesco Dibenedetto, features the finest British ingredients prepared with classical French techniques, offering a perfect balance between heritage and modernity.

Thomas Straker
Tom started his journey into becoming a chef after leaving school in 2008, but really this journey began long before that, growing in Herefordshire where his parents kept special breed sheep, he prides himself on his deep knowledge of produce and good farming practice, and has made this a focus of his story thus far. Tom's mother also owned a local pub where he gained his first bit of exposure into the pressures and excitement of commercial kitchens at the ripe old age of 12.
He studied at the well renowned Ballymaloe cookery school and has spent the majority of the last decade working in some of London's top restaurants, The Dorchester, Dinner and Elystan Street to name a few.
More recently he has been working on his first restaurant project STRAKER'S, which has been subject to delay due to COVID and is yet to be finalised. STRAKER'S is all about showcasing simplicity, seasonality and conviviality. Alongside this Tom is working on several exciting projects, whilst keeping up with a growing social following, which enables him to showcase his skill and passion for great food on a daily basis.

Norbert Niederkofler
Norbert Niederkofler was born in the Dolomites and after various international experiences made his way back to South Tyrol, where he became executive chef of the St. Hubertus Restaurant at Hotel Rosa Alpina for 29 years, earning 3 Michelin Stars in 2017 and the Green Star in 2020 with his visionary concept “Cook the Mountain”.
After the closing of St. Hubertus in March 2023, Norbert Niederkofler opened his own restaurant “Atelier Moessmer Norbert Niederkofler” in Bruneck in July 2023, the first in the world to win several major awards in less than a year after opening. Here 'Cook the Mountain' found the perfect dimension to spread its sustainable principles. In November 2023, Atelier Moessmer was awarded three Michelin Stars and the Green star only 4 months after the opening, setting a world record in Michelin Guide history.
In May 2024, the Restaurant was ranked 52nd in 'The World's 50 Best Restaurants'. One year later, in June 2025, the restaurant reached 20th place and is now ranked among the best restaurants in the world.
In 2018 Norbert opened AlpiNN by Norbert Niederkofler, an all-round sustainable restaurant. In this location with a unique panorama at 2,235 mt above the sea level, young chefs are able to deliver via their affordable menu, the real and authentic mountain flavours.
Other projects of Norbert are the Bachelor's program in Food and Enogastronomy Sciences together with the University of Bolzano. He is also the strategic and operational Director of Horto, the new sustainable restaurant in Milan. One of the most representative projects of his vision is CARE's –The Ethical Chef Days, launched in 2016, which promotes an ethical, sustainable approach to hospitality that extends beyond the kitchen into every aspect of life.

About Sven & Amanda Wassmer-Bulgin
Sven Wassmer (1986) grew up in the Swiss lowlands close to Basel, and found his culinary home in the Alps. His path there led him through training grounds such as Viajante in London (by Nuno Mendes) and Schloss Schauenstein in Fürstenau (by Andreas Caminada), where he honed his skills.
In 2014, he earned his first two Michelin stars at Restaurant Silver at 7132 Vals. The opening of Sven Wassmer Memories, at Grand Resort Bad Ragaz swiftly earned him three stars and a Green Star for sustainable gastronomy by Michelin.
With a clear vision for modern Alpine cuisine and hospitality, he has since co-founded the Wassmer Family Group, which includes his flagship three-star restaurant Sven Wassmer Memories as well as offering his expertise to gastronomes and hoteliers through tailored consulting within the industry.
In Amanda Wassmer-Bulgin, award-winning sommelière and fellow co-founder of the Wassmer Family Group, he has found his life partner and strongest ally in his vision of Alpine cuisine. Amanda herself is a changemaker in the wine world. With an infinite wealth of knowledge and recipes, she is paving the way forward in offering new and exciting taste experiences for outstanding wines and non-alcoholic beverages alike.
