Four Seasons Hotel Singapore welcomes back a familiar face as award-winning Chef Alan Chan returns to lead the culinary vision of the Michelin-recommended Jiang-Nan Chun. His reunion with the kitchen where his Singapore journey began will be marked by an exclusive Four Hands Dinner with current Executive Chinese Chef Alec Khoo — a two-night celebration of Cantonese technique, tradition, and creative exchange.

The six-course dinner (SGD 168++ per person) will run 26 and 27 June 2025, offering guests a rare chance to experience both chefs' distinctive styles on a single menu — from Chef Alan's modern interpretations to Chef Alec's precise, traditional and produce-forward cooking. It also signals a new direction for Jiang-Nan Chun as it explores collaborative and seasonal programming under Chef Alan's leadership.

Among the highlights is a duo plate that opens the evening: Chef Alan's Deep-Fried Scallop Sphere with Shrimp Paste and Australian Winter Black Truffle, contrasted by Chef Alec's Chilled Five Spice Foie Gras with Caviar and Scallion Pancake. Other dishes include Baked Cod Fillet with Egg White, Quinoa and Fish Roe (Chef Alec), and Chef Alan's signature Braised Egg Noodles with Australian Lobster in Superior Stock — a dish refined over years of international practice.

“Returning to Jiang-Nan Chun feels like coming full circle,” says Chef Alan. “Cantonese cuisine is about balance and memory — and this dinner is a way to reflect on how far we've come while sharing something new.”

Chef Alec adds, “This is a rare opportunity for us to work side by side, each bringing different perspectives to the table. The result is a menu that's grounded in tradition but also open to reinterpretation.”

As a Hong Kong native, Chef Alan's culinary beginnings started at the age of 15, where he worked in several Hong Kong and Kowloon restaurants before moving to Singapore in 2001. With now over 30 years of culinary experience in various prestigious and fine dining destinations, his international journey has provided him with a unique perspective on flavours, presentation, and techniques. These experiences have not only broadened his culinary horizon but have also shaped him into a chef who seamlessly blends the finest of Cantonese traditions with modern creativity.

Chef Alan was honoured as the Best Asian Cuisine Chef of the Year in the 2016 World Gourmet Summit Singapore. His culinary excellence further earned global recognition in 2018 when his efforts earned him the World Top Gourmet Restaurant of the Year, and in that same year, World Top Gourmet International Master Chef, a testament to his influence on the global culinary scene. Most recently, in 2025, his work was recognised with the prestigious One Diamond in the inaugural Black Pearl Restaurant Guide, solidifying his position as a leading figure in the world of fine dining.

Following the dinner experience, Chef Alan will also be unveiling his exclusive Chef's Tasting Menu from 28 June 2025, a carefully curated collection of signature dishes that reflect his extensive experience in Chinese fine dining. The tasting menu will also be available à la carte and will immerse guests in the authentic flavours of Cantonese cuisine, with each dish a tribute to time-honoured recipes.
