Russell & Atwell Saltmarsh Café Crème Micro-Batch - from £23 including postage (3x 90g pouch) russellandatwell.com

British chocolate pioneers, Russell & Atwell have raised the bar with their latest creation - Saltmarsh café crème, a hand-finished smooth, milk chocolate infused with Bella Barista's Salt Marsh Coffee.

This collaboration merges Russell & Atwell's exceptional fresh chocolates that use British organic double cream and wildflower honey, with Bella Barista's trailblazing coffee, renowned for maturing its beans in a secret boatyard, next to a salt marsh. Bonded by more than ingredients, both brands share a passion for putting a British stamp on the nation's favourite flavours.

Inspired by the historic process of shipping coffee from India whereby the coffee beans absorb sea air and humidity during transport on wooden ships, Bella Barista has recreated this process on the windswept Norfolk coast. Brazilian organic coffee beans are matured in an old boathouse just meters from the sea so they absorb the salt-saturated winds of the shoreline over several weeks. The flavour transforms over time, mellowing its acidity and adding notes of popcorn, malt and sea air.

The resulting Russell & Atwell x Bella Barista Coffee Chocolate is a celebration of British terroir - the salt-marsh-aged coffee grounds are steeped into Russell & Atwell's signature smooth milk chocolate, made with organic British double cream, wildflower honey and sustainable cocoa. Expect creamy, melt-in-the-mouth chocolate with a gentle undercurrent of roasted coffee.

Steve Russell, Co-Founder of Russell & Atwell, shared his excitement, “Our fresh chocolates are all about raising the bar. Cocoa beans are only grown in select locations around the equator so we use the world's finest Fino de Aroma cocoa, ethically sourced from co-operatives in Colombia ensuring that more value stays at the source.  We then enrich the chocolate with British ingredients such as organic British cream and honey to unlock a smoother, more indulgent chocolate experience. My co-founder, Giles had said when we launched the business 'over my dead body will we EVER do a coffee flavour', but when we tasted Bella Barista's Salt Marsh Coffee, I knew we'd won him over.. It's an exceptional coffee, complex, deeply aromatic and beautifully gentle - perfect for infusing into our chocolate. These micro-batches give us the opportunity to stretch and play with different flavours and sensations. I'm really excited about this one. ”

Marcel Binley, Managing Director at Bella Barista explained, “We've always believed in the potential of organic coffee and its ability to tell stories through flavour. Our Salt Marsh Coffee reconnects us to lost traditions and brings that story to life in the most delicious way imaginable - to combine it with Russell & Atwell fresh chocolates, a fellow foodie business who take their ingredients equally seriously is a dream for us.”

The new chocolate is available in limited quantities from Russell & Atwell and drops on 15 May at 12pm from russellandatwell.com.
