This accolade, which signifies "Excellent," highlights Chef Gaetan's exceptional skill, creativity, and leadership, placing him among the world's elite culinary professionals. Among hundreds of chefs worldwide, he is one of only four chefs based in Indonesia to receive this honour, further affirming Rumari's reputation as a premier dining destination.
Founded by Polish neuroscientist Joanna Slusarczyk and Italian gastronomist Cristian Gadau, The Best Chef is a global platform that celebrates the world's most talented chefs. The 2024 awards took place in Dubai, continuing a tradition that began in Warsaw in 2017. Unlike other rankings, The Best Chef focuses on the individuals behind the dishes, highlighting those who innovate, lead, and make positive impacts in the culinary world. Winners are chosen through votes from a diverse group of chefs, food journalists, and gastronomy experts. This year, the voting base grew from 350 to 568 participants, ensuring a more inclusive and diverse reflection of the global culinary scene. Voter identities and selections remain confidential, with all votes verified for accuracy.

Chef Gaetan's culinary journey began in Lyon, France—a city known for its rich gastronomic tradition—where he was inspired by his grandmother, a professional chef who nurtured his passion for cooking. After refining classical French techniques in Michelin-starred kitchens, he broadened his expertise in the United States, Dubai, Thailand, Malaysia, and Indonesia. It was in Southeast Asia where he found his passion for merging local flavours with his French roots and deepened his commitment to sustainability.
This ethos comes alive at Rumari, Raffles Bali's fine dining destination overlooking Jimbaran Bay, where Chef Gaetan champions the 80/20 Rule: sourcing 80% of ingredients locally from the Indonesian archipelago to highlight the richness of native produce while importing only essentials. Under his guidance, each dish is a celebration of Indonesian and Southeast Asian flavours, presented in contemporary style. Guests can savour this approach through degustation menus and à la carte offerings, complemented by an award-winning wine list that boasts over 250 labels, including the exclusive honour of being Indonesia's first and only Krug Ambassade.
