The artistry of making DukesHill's superior bacon comes with expertise, hands-on traditional techniques and plenty of time. The foundation of its flavour starts with dry-curing by hand with a blend of salt and unrefined brown sugar before being left to mature for five days. The flitches of bacon are then hung to dry naturally for up to five days. As the bacon matures, it develops an exceptional and authentic, robust flavour while remaining firm.
Unlike mass-produced bacon, the absence of added water in the production process means DukesHill's bacon doesn't shrink excessively when cooked, resulting in a bacon weave that's perfect for Christmas turkeys which maintains its structure throughout cooking, adds a layer of savoury depth and prevents the poultry from drying out during cooking.

Recipe: Pigs in blankets with pickled orange glaze
Prep time: 5 mins. Cook time 20 mins
Ingredients
6 DukesHill Lincolnshire sausages
6 rashers DukesHill Smoked dry cured streaky bacon
A small bunch of sage leaves
3 tbsp Seville Orange Marmalade
Method
Preheat oven to 180c.
Wrap each sausage in a bacon blanket, tucking a sage leaf or two under the bacon. Tip the sausages into a lined baking tin. Smother marmalade all over the sausages.
Bake for 20 minutes. Halfway through, shake them around, ensuring they are completely coated in their dark sticky varnish.
