Bonito, the highly anticipated restaurant at the new Hotel Marvell, Byron's first five star hotel, opened its doors to the public on Wednesday 26 July. Led by chef Minh Le, Bonito blends elegance and comfort, bringing exceptional service and an unforgettable dining atmosphere.

With an impressive culinary background, Minh Le is poised to take Bonito to new heights.His journey has taken him through some of Australia's most esteemed establishments. His previous roles at Spices Peak Lodge, The Byron at Byron, and The Foraging Quail have equipped him with a diverse range of skills and experiences, solidifying his reputation as a chef of exceptional talent.

At Bonito, Minh Le will fuse his heritage and passion for seafood and plant-based cuisine, incorporating locally sourced ingredients from trusted suppliers.

The menu at Bonito is a testament to Minh's creativity and his commitment to creating dishes that not only please the palate but also reflect the ethos of sustainable and responsible dining. 

He has created a tantalising array of dishes that combine the freshness of the sea with the richness of plant-based ingredients. His expertise shines through in the creative combinations and meticulous execution of each dish.

Guests can expect a culinary journey from the Organic Sourdough accompanied by house-cultured miso butter, to Oysters dressed in a Japanese dressing and adorned with tobiko and Hiromasa Kingfish glazed with a spiced soy sauce and served with shallot relish and Petuna trout roe. Each dish beautifully marries contrasting flavours and textures to delight and intrigue.

Everyone is catered for in Bonito's thoughtfully curated menu.
