As part of Nobu London's Spring celebrations, the restaurant has introduced a new London Omakase menu. The set omakase – which translates in Japanese to 'I'll leave it up to you' – is priced at £190 per person, and features a selection of dishes, created and collated by Head Chef Kyle Marston.
The menu begins with Caviar and Avocado Nori Tacos, followed by Sashimi Three Ways, and Baby Spinach Salad with Dry Miso – an umami-packed combination of fresh spinach, crispy yuba, yuzu, olive oil, Parmesan, and Nobu's famous dry miso. Next, guests will enjoy a Sushi Selection, crafted by Head Sushi Chef Masaru Okayama and his team, followed by Dover Sole Red Chilli Shiso Salsa, and Wagyu Hobayaki. Hobayaki is the Japanese practice of serving grilled meat and vegetables on a dried hoba (magnolia) leaf. Nobu London's version features premium-quality, A5-grade wagyu beef, cooked over a robata grill, and served with sweet miso sauce in a Japanese-style toban yaki dish, to retain the smoky flavour of the hoba leaf.
The menu concludes with a dessert of Mango and Milk Chocolate Mousse, with passion fruit cream, vanilla sponge, and lemon and vanilla sauce, developed by Executive Pastry Chef, Regis Cursan.
Through until 30th April, guests can also enjoy two exclusive sakura-themed specials. First, the Hajikami and Sakura Martini, priced at £16, and made with Maraschino liqueur, gin, sake and hajikami brine – the salty, sour pickling solution from aromatic Japanese ginger stalks; instantly recognisable as the accompaniment to Nobu's iconic Black Cod with Miso. This twist on a classic Dirty Martini pays homage to two Japanese traditions – pickling and preservation; and 'hanami', the act of viewing cherry blossoms.
For dessert, dive into the Cherry and Sherry Trifle, layered with liqueur-soaked cherries, orange and vanilla sponge soaked in bourbon syrup, and Tahitian vanilla mousse. Priced at £14.50, this decadent, yet delicate dessert, is the perfect end to any Nobu meal.
