London, March 2023Alex Dilling At Hotel Café Royal, the eponymous fine-dining restaurant located at Hotel Café Royal in London, has been awarded with two stars in the Michelin 2023 Guide, just six months after opening. The female-backed restaurant is the first for Dilling in his own name.

Housed in Hotel Café Roysl, this artistic restaurant flips the switch on gastronomy with an exclusively intimate dining experience and just 34 seats. Overlooking the iconic curve of Regent Street, diners can indulge in Dilling's renowned contemporary French cuisine. The silk panelled dining room, reimagined for the opening, welcomes diners for an 8-course tasting menu, or a weekday set lunch.

We are beyond proud of this very special two star honour from Michelin.

Following the success of his time at the helm of two-Michelin star kitchens, including 'The Greenhouse' and 'Helénè Darroze at The Connaught', Dilling is delighted to receive such recognition and status under his own name.

Dilling enthuses about his young and energetic team who share in his vision, to take a modern twist on classical fine dining, noting – “we built our team and restaurant from scratch, with many past colleagues joining me to help realise my dream of opening my own restaurant. This includes my Head Chef Pierre Minotti, GM Benoit and our restaurant owner Victoria Sheppard. To achieve one, let alone two stars so early in our restaurant journey is testament to our team's dedication and hard work.”

The award-winning restaurant see's the return of some of Alex Dilling's signature dishes including “Clam Chowder" and “Hunter Chicken”. These sit alongside technically advanced and exquisitely presented future classics like Wild brill, cuttlefish and smoked eel emulsion. The dishes on the menu are always evolving, either seasonally or as Dilling and his exceptional team are inspired.

Menus start at £65 for a three-course lunch served with canapes and petit fours, whilst Dilling's 7 Course tasting menu is available lunch and dinner at £175, served with canapes and petit fours.

 

Signature dishes, as pictured above, include: 'Hunter Chicken', 'Clam Chowder and 'Wild Brill, Cuttlefish, Smoked Eel Emulsion'.

About Alex Dilling

Chef Patron Alex Dilling, 39, was born in London and raised between California, USA and England.  Alex attended renowned culinary school Westminster Kingsway, London. Alex started his fine dining journey at Alain Ducasse in New York where he developed a love and passion for technical French cooking. Alex left New York aged 28 and became the Executive Chef at Helene Darroze at The Connaught and followed by The Greenhouse, maintaining two Michelin stars for both.

Since the closure of The Greenhouse in 2020 Alex has been travelling the world creating pop up experiences with highly respected chefs and establishments. Alex and Head Chef Pierre Minotti worked together previously at The Greenhouse and The Connaught. Alex is committed to making Alex Dilling at Hotel Café Royal one of the finest restaurants in the country.

Hospitality Entrepreneur Victoria Sheppard is behind the venture with Hotel Café Royal and chef Alex Dilling. Victoria has previously worked with Alex whilst she was PR & Marketing Director at 'The Greenhouse' when Alex joined as Executive Chef. Victoria also owns Mayfair coffee shop – “Queens of Mayfair”. Prior to this Victoria worked in hospitality and special projects marketing at Fortnum & Mason and Marc restaurant group where she was group PR & Marketing Director looking after 7 businesses in the luxury hospitality space. She was named as one of the '30 under 30 in Media' by the Daily Mail and '30 under 30' at the Restaurant Marketing Awards.
