Les Parisiens: Embodying France's Haute Bistronomie
Lively and modern yet firmly rooted in traditional French cooking and local produce, Les Parisiens is a neo-brasserie conceptualised by award-winning chef Thibault Sombardier. Featuring a separate entrance overlooking the romantic streets of Saint-Germain-des-Prés, the restaurant is open for lunch and dinner, Tuesday to Saturday, with a considered menu of informal yet innovative dishes that range from responsibly sourced meats to fish and fresh vegetables from the French coast. Highlights include Corn-fed Les Landes chicken with anchovy, tarragon and béarnaise sauce and Mustard-browned Brittany lobster and frites, while the indulgent dessert menu offers Pistachio soufflé with raspberry and orange blossom sorbet and a selection of Beillevaire cheeses. Accompanying the menus, an eclectic wine cellar features bottles from winegrowers' estates, biodynamics, plot-based vintages, fine references from the great French appellations and Champagnes from both winegrowers and great houses.
Chef Thibault Sombardier
Inspired by the flavours of his childhood spent growing up between Burgundy and Beaujolais, Thibault Sombardier is widely considered one of the Paris' most exciting and diverse chefs. Sombardier's experience includes the Michelin-starred restaurant Antoine and competing against the country's finest culinary talent on the 2014 series of Top Chef, eventually taking second place. His style combines haute cuisine with a less inhibited style of cooking, showcasing a true passion for produce by sourcing only the very best seasonal ingredients.
Locally Inspired Cocktails at James Joyce Bar
Adjacent to the restaurant, the intimate James Joyce Bar is Pavillon Faubourg Saint-Germain's destination for expertly crafted cocktails, wines by the glass and digestifs. Signature cocktails are inspired by the locale, including Jardin Suspendu, a concoction of gin, lemon, arugula and green zebra shrub – named after the famous Pont des Artes, which was originally designed as a hanging garden – while Pré No. 5 combines chilli-infused vodka with rose, raspberry and hibiscus. In keeping with the lively neighbourhood scene, the bar is open throughout the evening and into the night, with a menu of small plates including Gillardeau oysters, Gravelax salmon with tarragon, parsley and chive and an assortment of ice creams and sorbets.
Classic Meets Modern Design
To complement the bistronomic experience, the light-flooded interiors of Les Parisiens have been conceptualised by esteemed designer, Didier Benderli. Designed as a neo-brasserie, Les Parisiens incorporates modern touches into the traditional brasserie space, with angles blending into curves, plush velvet banquette seating wrapping around the corners and golden elements providing diners with a sense of luxury. The clean and simple style ensures the focus is firmly on the food, while a centrepiece mosaic floor by Florence Berthet Sonsino adds depth and artistic dimension. Next door, the James Joyce Bar is warm and inviting, combining wood-panelled walls with sophisticated bronze and royal blue accents.
