Seven new festive cocktails to mark the first anniversary of the launch of the Eccentric Spirits Collection are set to add some sparkle to this year's Christmas season.

There is one cocktail, complete with recipes, for each of the distinctive bottles in the collection, which feature six gins and one dark rum.

Since being rebranded and given new twists when unveiled to the world last November and December, it has been an incredible award-winning year for the seven-bottle collection, which is inspired by the cities, people and botanicals of Wales and produced by In The Welsh Wind distillery.

The collection has seen its Young Tom win gold at the Drink Business & Spirits Business 2021 awards, the Limbeck cask-aged gin claim a trio of prestigious awards this year including silver at the World Gin Awards and Gin Masters, while the London Dry Madam Geneva won bronze at the 2021 World Gin Awards.

The Eccentric Spirits Collection (rrp £32-£38) also includes Cardiff Dry, Dewi Sant, Pembrokeshire Pinky and Black Batch Rum.

Mixologist Owen Williams, who has created a number of cocktail classics using the collection, has now produced these magnificent seven tipples for the Christmas party season.

Eccentric Collection Notes

Limbeck £38, 70cl, 46% ABV

A gorgeously heady mix of blue ginger, citrus and tarragon, Seville orange and orris. It is rested in French burgundy casks leaving the gin a subtle peach colour.

Madam Geneva, £38, 70cl, 42% ABV,

A real classic London Dry Gin. A combination of angelica, wild sunflower and a range of fresh citrus for a crisp, sharp tang. 

Pembrokeshire Pinky, £32, 70cl, 40% ABV

Named after the Pink Thrift, the flower of Pembrokeshire, it is a blend of cherry and lemongrass creating a crisp, refreshing flavour with a beautifully smooth finish. 

Cardiff Dry, £32, 70cl, 40% ABV

Distilled in honour of the Welsh capital. This dry gin is as sharp as a Bute docker's hook. Juniper with big citrus character, best served with mint and black pepper.

Young Tom, £38, 70cl, 46% ABV

Sweet, floral and malty rich flavours from this distilled IPA, then rested for six weeks with fennel, sunflower root and star anise.

Dewi Sant, £32, 70cl, 40% ABV

A sea spray inspired, coastal infusion of aromatic rich herbs, fennel and spritzy citrus.

Black Batch Rum, £32, 70cl, 40% ABV

Black Batch takes its colour from a heavily charred cask of American oak. Lightly spiced with orange, cinnamon & cloves, it celebrates natural colours and flavours.

About In the Welsh Wind distillery

In The Welsh Wind distillery is based five miles north of Cardigan on the West Wales coast. Since 2018, the distillery has been developing and distilling award-winning custom branded spirits for other businesses and launched its own Signature Style Dry Gin in July 2020, and secured a Gold medal in the Premium category of the Gin Masters 2021.
