Introducing Open Fire Cookery Courses: Escape to the Chilterns for an Indulgent, Gastronomic Break at the Bottle & Glass Inn

The Bottle & Glass Inn

New for 2022, the Bottle & Glass Inn, set in the countryside at Binfield Heath, just outside Henley-on-Thames, is introducing a series of Open Fire Cookery breaks. Based in the garden of this quaint Grade II-listed restaurant-with-rooms, a tent tipi with log burning stove and outdoor kitchen will act as the field classroom. During these relaxed cookery days, guests will have the chance to use the wood fired oven as well as cooking with a variety of open fire cooking kit, from hanging frames, chicken baskets, asado crosses, hooks and chains, and planchas to cooking directly on the earth. Participants will also enjoy a range of demonstrations, learning about cooking techniques, preparation, how to manage fire and developing recipes. 

The day begins at 9am with breakfast cooked over the open fire. A cooking plan is key when working with fire and large cuts, whole carcases and long fire cooks, so the group will plan out their cooking tasks. Expect to be using the finest seasonal ingredients found right on the doorstep, from Phillimore estate-caught game to home-grown produce from the restaurant's vegetable garden and poly tunnels, alongside delicacies from some of the finest local producers, farmers and artisans. Drinks will be on tap, tastings are regular with multiple dishes ready to sample throughout the day, but the finale is a jovial banquet – a feast for both the eyes and tummy.

The cooking breaks are led by David Holliday, chef and co-owner the Bottle & Glass Inn and its sister restaurant The Hart Street Tavern, in Henley on Thames. Holliday has taught at the Game & Wild Food Cookery School in West Berkshire where he was also Head Chef at the adjoining pub, the critically-acclaimed Pot Kiln. Holliday was also the former general manager of Fulham's The Harwood Arms - London's only Michelin-starred pub. He went on to launch the first ever range of wild British game stocks, pasta sauces and ready meals under the brand 'David & Oliver' stocked in over 2,500 farm shops and delis, alongside Ocado and Waitrose, prior to opening the Bottle & Glass Inn with co-owner Alex Sergeant in 2017.

Prices: An Open Fire Cookery Day Course costs £225 per person including all food and drinks - additional guests may join for the feast only from £75pp.

Alternatively make a weekend of it and begin and end the Cooking Course with a night in one of the Bottle & Glass' new rooms, opened in July 2021, from £345pp, based on 2 sharing, including 2 nights' B&B accommodation and a 1-day Cooking Course with all food and drink provided during the course.

Course Dates in 2022: 17 January, 19 February, 2 April, 20 June, 15 October and 3 December.
