London Smoke & Cure, the award-winning producer of artisan smoked and cured salmon, bacon and charcuterie, is working with award-winning Hayman's Gin to produce its first ever gin-cured salmon in time for World Gin Day 2021 #worldginday on Saturday 12th June.
The Streatham-based smokery chose Hayman's Gin for its outstanding quality and local Balham presence to create a true (south) London celebration of the annual gin festival. World Gin Day was created by Neil Houston in 2009 to bring friends together and drink gin. It is now run by Emma Stokes, also known as @GinMonkeyUK, and has evolved into a global celebration with events running simultaneously in more than 30 countries.
The World Gin Day cure will be produced using Hayman's London Dry Gin, some additional botanicals from the gin distillation process as well as natural flavours that complement the notes of the gin and the mild, buttery flavours and texture of the sashimi-grade salmon.

We wanted to create something that was more complex than a traditional gin cure and that revealed the different flavours you can take from combining two excellent products. The synergy continues as both the smoked salmon and Hayman's Gin are crafted over a two day period, using natural ingredients as well as modern and traditional processes to create their award-winning flavours.
London Smoke & Cure's Sashimi-grade salmon secured two stars in the Great Taste Awards in 2020. Judges praised its 'amazing texture', 'gentle creaminess' and 'subtle hint of juniper'. Hayman's London Dry has received numerous awards from all over the world over the last decade.

About Hayman's Gin
The Hayman's Gin story began in 1863 when James Burrough, a charismatic London pharmacist, opened a small distillery on Cale Street, Chelsea. At that time, London's gin of choice was Old Tom gin; however, James was pioneering the drier style that the nation has come to know and love as London Dry Gin. James was the great grandfather of Christopher Hayman, 4th generation and Master Distiller at Hayman's Gin.
Hayman's boasts 150 years of rich history which has resulted in the wide acclaim the brand enjoys today.. It is currently Christopher's children, James and Miranda, who run Hayman's. About World Gin Day
World Gin Day itself was actually founded by Neil Houston in 2009, a very bright idea to bring his friends together to drink gin in Birmingham! Emma and Neil were already firm gin-friends, and so it made sense to bring the celebrations to London in 2010, involving some of Emma's friends too, in a lovely little gin bar called Graphic in Soho. Since then the day has grown year on year, reaching an ever bigger audience.
In 2013 Emma formally took charge of the day, due to Neil's work commitments, and the day has since evolved into a truly global celebration with events running in over 30 countries around the world, reaching over 200 million people on social channels.
