The award-winning DUSK Restaurant in Brentwood, Essex, is to reopen following the pandemic lockdown, with a tasting menu of spectacular molecular gastronomy.
DUSK's Executive Head Chef Stephen Gomes made his name winning numerous awards at his former Moksh is Cardiff, for visually stunning creations, with exquisite flavour fusions.
When not preparing free takeaway meals for thousands of frontline NHS staff, key workers, care home residents, plus vulnerable elderly people in Essex and north Kent, Gomes spent hours during lockdown in his laboratory kitchen, experimenting with new flavour combinations and techniques.
The results will be revealed to the public when DUSK reopens on Thursday 20th May.
Combining scientific cooking methods with homegrown herbs, local produce, Gomes will bring his trademark light theatrical touch to new tasting menus.
Tea Flight
There will be a choice of 5- and 7-course menus, with vegan and vegetarian options, plus an accompanying speciality tea flight.
DUSK does not serve alcohol, although customers are welcome to bring their own drinks, with no charge for corkage. There is also an extensive range of non-alcoholic wines, beers and mocktails.
The new menus, which will vary with the seasons feature Smoked salmon cheesecake, dill bread, 24ct gold leaf; Shredded A5 wagyu beef, overflowing apple gazpacho; Pan-seared Black Cod, reduced sweet chilli, spicy mango salsa; Wasabi, broccoli, truffle, charcoal macaroon, aubergine éclair; Sous vide grass fed French-trimmed baby lamb chops, mixed pickle hummus, salad, pearls, ghost reaper gravy, violet rock potatoes,rosemary fire; Rock lobster, fluffy lemon air, blue pea, reduced velouté plush splash ofhouse desserts.
“I've designed the menu to tell a story, and take the diner on a culinary journey, based on the inspirations from my grandma, my father Chef James, Roald Dahl and the science of spice,” said Stephen.
The 7-couse tasting menu is priced at £89 (£59 vegan), and with the matched tea flight at £20. The 5-course is £69 (£59 vegan).
TV Chef
Throughout his glittering career working in top restaurants across the globe Stephen Gomes has won numerous awards and achieved 2 AA Rosette. His numerous TV appearances have included BBC2's Great British Menu.
The new a la carte menu includes: The Campfire which presents a 'log fire' of wasabi, broccoli, truffle, charcoal macaroon, aubergine éclair, in a steel thali.
Angry Birds – Pepper marinated corn-fed chicken morsels, grilled quail, puff rice, quail egg, mint aioli.
A unique venue, DUSK provides a multi–purpose hospitality destination, offering dinners a selection of world cuisines, with a choice of fine, casual and private dining experiences with live music and entertainment in the popular alfresco shisha and cigar lounge.
With three discrete dining areas each with its own menu, the restaurant, which caters for up to 400 customers, was transformed with an investment of almost £1million by restaurateurs Sharif Uddin and Shakil Islam in 2019.
Editors' Notes
Stephen Gomes is a Welsh executive chef and TV television personality, originally from Mumbai, he is renowned for his molecular gastronomic take on Indian recipes. He is a fourth-generation chef, His father, James Gomes, worked at India's first five-star beach hotel there, before working in, USA and UK, as an executive chef in hotels and restaurants. Stephen's grandfather served as a chef on board a battleship during World War II. His great grandfather was Head Chef at the Eastern Shipping Company during the Raj.
In 2015, he was awarded two AA Rosettes for Moksh; the first Indian restaurant in Wales to do so. He was named Ethnic Chef of the Year at the Craft Guild of Chefs Awards 2015. In August 2015, Stephen was chosen to represent Wales on BBC2's Great British Menu. Other accolades including the Ethnic Chef of the Year Award at the UK Craft Guild of Chef's award 2015; Goldstar Welsh Curry Chef of the Year at the Welsh Curry Awards 2014; and Goldstar English Curry Chef of the Year at the English Curry Awards 2013. He has held the title of 'Best UK Indian Chef' with the Cobra Good Curry Guide for a large part of a decade. At a ceremony at the House of Commons, Stephen Gomes was crowned the Outstanding Asian and Oriental Chef of the Year 2017. In 2019 DUSK won the LUXlife award for Best Fine Dining Shisha Experience.
