Chef-patron of Michelin-starred SOLA, Victor Garvey, MasterChef: The Professionals winner, chef and restaurateur Sven-Hanson Britt, and the journalist Joe Warwick have teamed up to create the ultimate at-home burger menu, #TheBurgerIncident.
On sale now for delivery from Friday 23rd April, #TheBurgerIncident is influenced by the trio's American, British and Irish culinary roots, and their favourite ingredients and fast-food dishes.
The Burger is a 150g patty made with A5 Kagoshima Wagyu, chosen by Victor; 60-day aged Derbyshire Longhorn, chosen by Sven; and Joe's favourite Himalayan salt-aged Antrim rib, from Peter Hannan in the north of Ireland. It's served in a brioche bun spread with truffle butter, and layered with Comté, grilled baby gem and porcini ketchup. A whole spring truffle, with slicer, is included for shaving over the burger.
On the side are crispy potato Croquetas Tots with cultured Jersey cream, and #TheBurgerIncident slaw of Napa cabbage, nasturtium, horseradish, dill and pickled red onion. A tin of N25 caviar is supplied as an indulgent topping for both. The menu also includes four mirin-glazed, boned free-range chicken wings, stuffed with cognac-enriched duck liver.
To finish there's McGarvey's apple pie – cinnamon-lacquered rough-puff pastry, filled with Cox's Orange Pippin – and to drink, a Nouveau Lebowski. A take on the classic White Russian, made famous by 'The Dude' in the Cohen Brothers' The Big Lebowski, it's made with Death's Door vodka, distilled on Washington Island in Wisconsin, award-winning Mr Black Cold Brew Coffee Liqueur from Australia, a toasted buckwheat 'cream', Valrhona Manjari chocolate, and an Oreo cookie.
The complete menu for two is priced at £139; individual dishes can also be ordered separately, as well as there being an option to 'double up' on the burger patties. #TheBurgerIncident will be available for four weeks via the SOLA At Home delivery page on restokit.co.uk
Says Joe Warwick of his involvement, “With the World Restaurant Awards on hiatus, I've enjoyed helping out front-of-house at SOLA when it's been open and running the SOLA At Home meal-kit deliveries when it's been closed. But to actually get hands-on with creating a menu has been a blast. I can't wait to hear what customers think of #TheBurgerIncident.”
Sven-Hanson Britt adds, “While we've had a lot of fun working on this, we've taken the creative process very seriously, and every element of every dish is there for a reason – from the three types of beef in the burger patty to the caviar on the slaw. There's a little bit of each of our personalities in every dish.”
Victor Garvey says of the new collaboration, “I've wanted to do a super-deluxe, premium quality burger for some time now, and working with Sven, a chef I hugely admire, and Joe, who knows more than a thing or two about what makes world-class food, I'm satisfied we've come up with something that's genuinely awesome.”
#TheBurgerIncident is available to order from Tuesday 13thApril for delivery on Fridays from 23rd April at restokit.co.uk/collections/SOLA
