Sofitel Sydney Darling Harbour Introduces New Southern French Inspired Menu at Atelier by Sofitel

Under the watchful eye of Executive Chef Eric Costille and Executive Sous Chef Gaurav Bide - Sofitel Sydney Darling Harbour's signature restaurant, Atelier by Sofitel, has launched a new Southern French dining menu. The inspiration of the new menu is dedicated to the classic French dishes that solidified France's place in the culinary world. Bringing authentic tastes and rich tradition of provincial Europe to Darling Harbour, Sydney.  

 

Award-winning Costille, who joined the hotel in 2018 following a career in Michelin-starred restaurants in his native South of France and more recently in several five-star hotels in Asia, has been carefully considering the new culinary vision for the hotel.

 

“In a restaurant where creativity is king, culinary inspiration flows and fresh ingredients are transformed, I believe there is an opportunity to raise the bar on how our guests and visitors experience hotel dining.  Sofitel Sydney Darling Harbour has a cultural link to Marseille, as such, I wanted to take my inspiration from the Mediterranean and South of France, and bring together a kitchen and a menu which will deliver a selection of French classics infused with a modern culinary twist” explained Costille.

 

Executive Chef Eric Costille and his team of highly skilled chefs, each a craftsman in their own right have all geared up to recreate the magic of authentic Southern French cuisine. Offering Atelier's guests a range of fabulous flavours from renowned dishes such as a Plancha XL Yamba Prawns – 

where Costille has chosen to flambé the prawns in Pastis to give a hint of aniseed through the traditional garlic, fresh herb and tomato sauce; 1kg Whole Market Fish Niçoise through to Provençal Vegetable, a twist on the traditional Provençal, using baked eggplant, spring onions along with fresh artichoke heart and ratatouille.

 

Atelier's signature dishes include an elegant Lamb Shank Navarin – a traditional Rangers Valley Chuck Steak MBS3+ dish prepared to perfection in our Mibrasa Oven with charred Meyer lemon, confit garlic puree and peppercorn brandy jus; and the L'assiette De Legumes, a fine vegan dish served with tofu-olive polenta, glazed yellow endive, king oyster mushroom and confit beetroot ketchup.

 

As part of the new menu, Costille is using a Mibrasa grill that delivers an authentic charcoal barbecue flavour to his dishes, such as the Grainge Silver Beef Rib Eye Cutlet and Grasslands Beef Tenderloin.

 

Desserts play an equally important role in the new menu including the newly launched Charlotte by Charlotte, a lemon madeleine biscuit, light lemon cream and basil-strawberry sorbet and the Layered Chocolate Bar made with mascarpone, hazelnut and caramel.

 

“Inspired by the fresh flavours and quality ingredients that shape a way of life, the Atelier team, Executive Chef Eric Costille and I have married the tastes of Marseille with locally sourced produce to provide guests and Sydney-siders alike a sensory gourmet dining experience. This is a continuous flow through the design of Atelier and the restaurant mirroring the true meaning of its name 'atelier' or artist's workshop where our culinary team are on display with the open kitchen format, aiming to reflect the French “art de vivre” – through the essence of a bustling, vibrant French brasserie.” – Executive Sous Chef, Gaurav Bide added.

 

There's also the Red Room, a private dining area lending warmth and intimacy to exclusive functions, and the Wine Cellar, evocative of the grand French caves or wine cellars throughout France.

 

To round out every full dining experience, Atelier by Sofitel respects that the true bread and butter of every Marseilles is pairing food with a beverage du jour. With a wine selection from France, Australia, New Zealand, Italy and cocktail connoisseurs stirring up light tonics, will complete your gourmet dining experience.

 

These are featured in the 800-bottle wine and champagne wall that connects Atelier by Sofitel to Sydney's only hotel Champagne Bar.  The Bar also features a special signature Louis Roederer Champagne from the 2009 vintage in collaboration with artist Philippe Starck, representing the mix of innovation and French heritage.   

 

Open for breakfast Monday to Sunday and for dinner Thursday to Sunday, Atelier by Sofitel also offers a selection of authentic southern French influence dining experience.
