In France, pancakes come a little earlier because they celebrate La Chandeleur on the 2nd February each year. The origin of La Chandeleur (Candlemas) is not exactly known. It can be traced back to candlelit processions held by the Pope in the 5th Century but is also said to mark the end of winter.
Whatever the exact origins of La Chandeleur, it is well timed to practise making perfect crêpes to delight family and friends on Shrove Tuesday just two weeks later, on the 16th February.
