Supermarket Aldi has released a series of hassle-free, healthy recipes that are perfect for batch cooking.
Make the most of mealtimes with Aldi's Sri Lankan Style Curried Cauliflower, a beautifully spiced vegan curry recipe that will give your mid-week meals a bit of Eastern inspiration and only costs £2.93 per portion to make. The super healthy dish is fast to cook and packed with all the goodness you need – it couldn't be simpler!

It's packed full of fresh vegetables and perfectly mixed with a mouth-watering peanut satay sauce.
The pasta-bilites are endless with Aldi's Pasta Carbonara with Rosy Red Salad. The classic carbonara recipe is served with a fresh tomato and beetroot side salad to brighten up your meal - delizioso! This recipe only takes eight minutes to prepare, costs £2.58 per portion and serves four, leaving you to enjoy a fuss-free mealtime, four days of the week!
Aldi's Sri Lankan Style Curried Cauliflower - £2.93 per portion
Serves: 4 people
Prep time: 10 minutes
Cooking time: 40 minutes
Ingredients
1 x Cauliflower
3 x Garlic Cloves
1 x Red Chilli – approx 15g
1 x 10g piece peeled Fresh Ginger
1 x tsp ground Cumin
1 x tsp Paprika
2 x tsp Curry Powder
1 x Lemon
2 x Red Onions
30g Cashew Nuts
30g Blanched Almonds
1 x 400ml Coconut Milk
1 x 400g Chopped Tinned Tomatoes
1 x 400g Tin of Chickpeas
100g Baby Spinach Leaves
35ml Rapeseed Oil
Sea Salt and Black Pepper
Method
Peel the onions, halve and thinly slice.
Peel and mince the garlic.
Grate or finely chop the ginger.
Finely chop the chilli along with the seeds.
In a wok sauté the onions in the oil for 4 mins on a low heat.
Add the nuts and cook another minute.
Add the chilli, garlic, ginger, ground cumin, paprika and curry powder. Cook on a low heat for a minute, stirring as you cook. Then, add the coconut milk and the chopped tomatoes.
Grate the lemon and juice – add the rind and juice to the curry sauce. Bring the sauce to the boil, season with some salt and plenty of black pepper.
Cut the cauliflower into eighths and add to the sauce.
Drain the chickpeas and add to the wok. Gently cook for about 25 mins till the cauliflower is just cooked and the sauce has thickened. Then add the spinach leaves, stir through and cook another 5 mins.
Serve alongside some basmati rice.
Aldi's Satay Green Stir Fry - £1.80 per portion

Ingredients
160g pack Sugar Snap Peas
1 bunch Spring Onions
1 Courgette
1 small Green Chilli
35ml British Rapeseed Oil
300g pack Asia Ready to Wok Noodles
1 Quixo Vegetable Stock Cube
60g Grandessa Smooth Peanut Butter
40ml Baron St Jean White Wine
100ml Boiling Water
1 tsp Stonemill Paprika
Juice from 1 Lime
Black Pepper
Method
Trim and wipe the spring onions, then cut them in half and slice lengthways.
Cut the sugar snap peas in half lengthways.
Cut the courgette into quarters lengthways and slice thinly.
Thinly slice the chilli with the seeds.
Pour the boiling water, lime juice and white wine into a small saucepan.
Crumble over the stock cube and whisk to dissolve.
Add the peanut butter and paprika – whisk well – then put to one side.
In a large wok or frying pan, heat the oil.
Add the peas and spring onions and stir fry for 5 minutes.
Add the courgettes and chilli and cook for another 3 minutes.
Add the noodles and cook through to heat.
Pour over the peanut satay sauce and toss, then serve.
Aldi's Pasta Carbonara with Rosy Red Salad - £2.58 per portion

Ingredients
400g Spaghetti or your favourite shaped Pasta
250g Reduced Salt Back Bacon, roughly chopped
1 tbsp Olive Oil
1 Garlic Cloves, crushed
½ bunch Spring Onions, trimmed and chopped
100g Parmigiano Reggiano, finely grated
4 Large Eggs
4 tbsp Single Cream
A little Parsley, chopped, to serve
Side salad
4 Salad Tomatoes, quartered
500g pack Beetroot, drained and quartered
1 pack Radish, halved
Salad dressing
2 tbsp Extra Virgin Olive Oil
2 tsp Lemon Juice
1 tbsp Fresh Basil Leaves, shredded
Salt and Ground Black Pepper to taste
Method
Bring a large pan of water to the boil and add the pasta.
Stir, then cook on a rolling boil for around 8 minutes until al dente.
Fry the bacon in the olive oil until almost crisp, then add the garlic and spring onions, cooking for a couple more minutes.
Remove from the heat.
Beat together the eggs and cream with a little black pepper and set aside.
As the pasta finishes cooking mix together the tomatoes, beetroot and radish in a serving dish.
Whisk together the dressing ingredients then pour over the salad, stirring to mix.
Drain the cooked pasta and return to the hot pan.
Stir in the cooked bacon followed by two-thirds of the Parmigiano Reggiano.
Pour in the egg mixture, immediately stirring through the pasta – the heat from the pasta will cook the eggs to give a creamy sauce.
Sprinkle with chopped parsley, serving immediately with the remaining Parmigiano Reggiano.
