Michelin Starred Chef Atul Kochhar Reveals Second Restaurant in Marlow Vaasu to Open 10th July 2020

Twice Michelin starred chef Atul Kochhar announces the opening of his second restaurant in the gourmet town of Marlow. Vaasu will become the fourth restaurant in Atul Kochhar Restaurants. 

Due to open initially for take-away only from 10th July, Vaasu will stay true to Kochhar's passion for gastronomical discovery, offering sensational Indian plates inspired by his intrepid travels across India.  The menu is set to showcase North Indian cuisine, paying particular homage to Punjab, Delhi and Rajasthan.

Vaasu is opening for gourmet take-away and home delivery until the 80-cover restaurant can welcome guests to dine in what promises to be a relaxed and welcoming environment.  The take-away menu will offer a selection of exquisite dishes all made from top quality ingredients to deliver authentic Indian flavours, aromas and spices.

Highlights from the take-away menu include appetizers such as Makai Aur Gosht Ki Seekh (two pieces of minced lamb kebab with mint chutney), Kurkuri Macchi Amritsari (crisp fried spicy telapia with tomato chutney - the famous street food from Punjab), Kadak Aloo Chaat (Bengal's potato salad snack with tamarind, yoghurt and mint chutney), and Baigan Bhajia (a popular dish of aubergine fritters in chickpea flour with mint chutney). 

The main courses invite guests to choose from a further splendid selection of flavours.  From shellfish such as Jhinga Tawa Masala (prawns pan fried with ajwain, onions and peppers), to chicken including Nawabi Murg Korma (a tikka dish with a cashew-cardamom sauce), and lamb such as Lasooni Saag Gosht (tender meat with spinach and garlic leaves).

The choice of Vaasu sides and accompaniments continues the culinary journey around India and features delights including Baingan Masala (spiced baby aubergine with tomatoes and coriander from Telangana), and Chickpeas Masala (spiced with garam masala and mango powder).  Guests can finish off with a choice of desserts including Bhapa Doi, a mango yoghurt mousse from Bengal.

Atul Kochhar commented: “The states across India offer a bounty of beautiful flavours, aromas and spices – from places where the tandoor oven and tawa griddle are kitchen essentials. Our new restaurant Vaasu brings all of this inspiration together, celebrating the life and culture of India through a menu of magnificent dishes.  We will give guests the opportunity to experience charming Indian cuisine in their own homes and to take-away until we can open this new casual and quirky setting.”

Working in partnership with design practice Dynargh Design, once open at a later date, the restaurant interiors will invite visitors to immerse themselves in the rich landscapes, traditions and architecture of northern India.

We are working together to ensure that every little detail is considered in order to create something very exciting for the town. The design of Vaasu has been inspired by the rich landscape and the lush green colours of Northern India, creating a calm oasis that fully immerses the guests.” 

Three other restaurants feature in Atul Kochhar Restaurants, all of which reopened on 4th July: The newly refurbished Sindhu at the Compleat Angler Hotel in Marlow; Hawkyns at The Crown Inn, Amersham and Indian Essence in Petts Wood, Kent.   

Vaasu is located at 2, Chapel Street, Marlow SL7 1DD at the former Italian restaurant, Villa D'Este, which closed its doors after 33 years on Sunday 22nd September 2019.
