Count Down to Valentine's Day With 'Redlove'

Our world-famous 'Redlove' apples are bright red on the outside and all through the flesh, even when cooked!  And are available from March from www.lubera.co.uk

As starters go from the Lubera Kitchen of Redlove Heavenly Treats, this soup is the perfect winter warmer, which will give you a warm red glow in your bowl and your cheeks! The Redlove apple taste, complemented with Gin is delicious and bang on trend for Gin lovers out there!  And to follow, we have a little 'Mousse à l'Amour Rouge' (which means Redlove Apple Sauce, to you and me!)


Redlove & Gin Soup

Ingredients
8 Redlove Apples, 1 onion, 600 ml vegetable bouillon, 50 ml dry white wine, 400 ml cream, 50 ml gin, 1 pinch of cinnamon, 1 pinch of sugar, some salt, little butter, whipped cream, bread croutons

Preparation
Peel and chop the onion, remove the Redlove apples from their cores and dice them. Add the onion into a saucepan with a little butter, add the Redlove apples and fry for a short time. Add the white wine, cover with the vegetable broth and cook well together. Then purée, add the cream and gin and taste with cinnamon, sugar and possibly salt. Pass the soup through a sieve. Serve the soup with whipped cream and bread croutons.


Redlove Apple Sauce

Simply peel your Redlove apples, cut them into pieces and cook. Calypso cooks the fastest (5-10 minutes); Era around 12 minutes and Odysso takes the longest, about 15 minutes. When using 3-5 apples, simply add approx. 50 ml water. No sugar, nothing. Serve chilled as a dessert. Or warm with meat dishes, especially pork and game.

- The most wholesome apple sauce, with the richest flavour

Mousse à l' amour rouge d'Odysso
- Although it is the sweetest apple, you can still taste the maturity level of the apple
- Very tangy, with plum flavours

Mousse à l' amour rouge d'Era
- Interesting combination of sparkling, but no longer tangy, acidity with very ripe flavours, also with a hint of a pear taste. 

Now there is no excuse not to have an apple banquet on your table to win anyone's heart!
