Salcombe Distilling Co. Launch Exclusive Limited-Edition 'Wolf Rock' Cask Aged Rum

Salcombe Rum

Salcombe Distilling Co. (SDCo.) have launched limited-edition 'Wolf Rock' cask aged rum. Limited to only 200 bottles and the first ever rum release from SDCo., 'Wolf Rock' (42.4% ABV) is displayed in a wooden presentation box, priced at £50 per 50cl bottle. It is available exclusively from salcombegin.com and the Salcombe Gin Victuallers store on Island Street, Salcombe from 9.00am on Saturday 7th December. 

Named after 'Wolf Rock' an iconic nautical landmark at the entrance to Salcombe's estuary and marks the beginning and end of the 19th century voyages of the Salcombe Fruiters. Famous for carrying fresh fruits and spices around the globe, these sailing vessels often ventured to the West Indies to acquire a sweeter and more potent payload; sugar, molasses and rum.

Co-founder Howard Davies, comments: “We're extremely excited to launch this small batch limited-edition rum. This release draws inspiration from the Salcombe Fruit Schooners and is the culmination of a passion for fine spirits and a long-held desire of mine and of our Master Distiller, Jason Nickels to ferment and distil an exceptional rum right here in Salcombe.” Howard continues: “'We're thrilled with 'Wolf Rock' and can't wait to give others the opportunity to try this very limited-edition release of ours.” 

Fermented and distilled a traditional 60-litre hand beaten copper pot still using molasses, unrefined sugar and a blend of yeasts selected by SDCo.'s Master Distiller with no other added ingredients. Unlike most rums, 'Wolf Rock' has no sugar added after distillation, nor is it darkened by the addition of extra colouring. This results in a rum with light golden colour and natural sweetness.

Tasting Notes

Remarkably smooth with layered complexity, 'Wolf Rock' has a sweet butterscotch nose,  complemented by flavours of warm vanilla, mellow oak and hints of banana with an endearing, light chocolate finish. 

'Wolf Rock' is best served 'on the rocks'; a large measure of rum with plenty of ice in an old-fashioned glass or in a 'Salcombe Stormy' cocktail.

Ingredients

50ml Salcombe Rum 'Wolf Rock'
Twist of Lime
Angostura Bitters
Topped up with Ginger Ale

Method
Fill a high ball glass with ice. Add 'Wolf Rock' and a squeeze of lime, top up with Ginger Ale. Add two dashes of Angostura Bitters and garnish with a twist of lime peel.

About Salcombe Fruiters

The Salcombe Fruiters were Schooner sailing vessels built in Salcombe and neighbouring Kingsbridge in the 1820s-1880s. These ships were the fastest of their day, with copper sheathed hulls and an ability to sail close to the wind, hand built to carry cargos of highly perishable fresh fruits, spices and herbs from around the world to England's ports. 

Salcombe Fruiters also ventured to the West Indies to acquire a much sweeter and more potent payload; sugar, molasses and rum. In the tropical Caribbean heat, puncheons or hogsheads of this rich spirit were carefully stowed on board these ships and surrounded by coconuts to protect the precious cargo during their perilous journey back across the Atlantic.
