Fallen Brewing Appoints Assistant Head Brewer & Launches a Rye IPA

Fallen Brewing

New Rye IPA 7% ABV 'special release' launches; created and brewed by Fallen Brewing's new Assistant Head Brewer Angus Morison.

Formerly Assistant Head Brewer at Williams Bros, Morison started out his career in 2010 working as a gift packer as a summer job before moving on to the bottling line. After this he was offered the opportunity to work as an Assistant Brewer in the brewhouse and it was here that Morison's interest for the brewing processes really grew and he progressed to shift brewer in 2012. By now, he was gripped with a serious passion for brewing and in 2015 was promoted to Assistant Head Brewer and achieved the IBD general certificate in Brewing.

Morison moved to Fallen Brewing in November 2017 and will be taking responsibility for the day-to-day operations of the brewery and overseeing production of the Fallen Brewing range with Lead Brewer Jamie Lockhart. The range currently comprises eight core beers and numerous seasonals and specials including Morison's first creation, a Rye IPA 7% ABV.

“I wanted to find a role in a dynamic growing craft brewery that has both the scale and the scope to allow me more control and influence over the process and I've found that here at Fallen Brewing.” Said Angus Morison, New Assistant Head Brewer for Fallen Brewing.

“As my first 'special release' beer here, I have brewed a Rye IPA, which is a twist on the ever-popular India Pale Ale style. I used malted rye to provide a sweet and almost tangy character to the beer. This works well with the fruitiness of the hops to really round out the flavour. I opted to keep the malt bill simple, which allows the rye to shine. As such, it is a pale beer. (Quite often crystal malts are used when brewing a rye beer, making it red and/or dark). It's dry-hopped with Azacca and Simcoe, chosen for the extremely fruity and citrus characteristics they exhibit. The ABV is 7%, which helps to balance the flavours of the malts and hops. It has only been brewed as a trial batch so far, and the full-sized commercial brew is pencilled in for the start of June.”

With Angus having full control over daily brewing operations it gives me the time to focus on other areas of the business” Owner and MD Paul Fallen comments, “Our sales are growing month on month and we need to continue to expand our team and our operations to ensure we are able to keep up with the demand. Operationally 2017 was a great year for us. We invested in a new building, new and bigger tanks and the canning line and there are exciting plans in the pipeline for 2018 and beyond.”
