Weetons Beefs Up its Butchery Counter

Premium food hall, Weetons of Harrogate, is elevating its butchery counter to the next level with the introduction of an 'extra-matured' range of 42 day aged local beef as well as a new selection of homemade charcuterie.

Following the successful installation of a dry ageing cabinet in store in December, customers can now enjoy the benefits of extra matured dry aged beef which will be available in all the prime cuts including steaks (sirloin, rump, rib eye, T-bone), carvery ribs, Cote du Boeuf and rolled sirloin.

'All of our beef is ethically produced and comes from within a twenty mile radius of the store,' says head butcher Colin Robinson. 'Dry ageing improves the eating quality of the beef. It deepens the flavour and enhances the tenderness and texture by enabling the muscle fibres to break down in a controlled environment. We already dry age our beef to 28 days but we're delighted to be able to offer an 'extra-matured' range which deepens the flavour even further.'

Launching alongside the 42 day dry aged beef is a new range of homemade charcuterie made from traditional breeds of pig such as Large White, Saddleback , Welsh and Gloucester Old Spot. Sourced from head butcher Colin Robinson's family farm in Pateley Bridge, customers can now sample the delights of slicing and snacking salamis, chorizo, air dried ham, and sliced and cubed pancetta, all of which -have been made in-store by the highly experienced butchery team.

Executive Chef and food hall manager Kevin Ingram is also excited about the new products: 'Here at Weetons we want to make the most of our delicious locally sourced produce. Not only do we use our own meat in the Chef To Go ready meals but also on the deli and in the restaurant and I'm really looking forward to incorporating the new charcuterie into our Spring Menu.'
