London sourdough pizza pros Four Hundred Rabbits are launching the capital's first vegan Thai Massaman curry pizza this March, created in collaboration with popular streetfood trader Greedy Khao and available throughout the month at the pizzeria's renowned neighbourhood restaurants in Crystal Palace and Nunhead. The limited edition sourdough pizza is inspired by one of the first plant-based modern Thai classics served by the KERB and Maltby Street Market vendor when they began trading one year ago, and showcases Greedy Khao's signature bold authentic flavours by combining toppings of Thai Massaman curry sauce, jackfruit, chickpeas, peanuts, pomegranate, red onion and coriander.
Four Hundred Rabbits' new vegan Thai Massaman curry special with Greedy Khao leads on from the fantastic response to their Veganuary peanut butter pizza with Pip & Nut, and is the latest in their successful series of monthly specials highlighting top London traders and producers including Zoe's Ghana Kitchen, Cannon & Cannon and Slow Ritchies. The team have also now added a new plant-based sourdough pizza to their regular menu, pairing radish, courgette, garlic and pine nut pesto pumpkin seeds, thyme and San Marzano tomato, after the growing cult following amongst regulars and local visitors for their previous “off-menu” vegan pizza.
Frequently recognised as one of the best pizzas in the capital, Four Hundred Rabbits always start with their award-winning 48-hour proved sourdough, cooked in the wood-fire oven at around 400 degrees to result in a deeply flavoursome base with a light chewy texture. They are passionate about using the best innovative ingredients for their toppings and working with talented local artisans for their London sourdough pizzas, always providing both one vegetarian and one meat speciality each month to ensure that guests always have something unique to sample. This month's second exclusive features the top-quality charcuterie by South London-based Brindisa, matching morcilla black pudding, Ibérico chorizo, cavolo nero, fior di latte mozzarella and San Marzano tomato.
Diners looking for a lighter option can enjoy a half-size pizza accompanied by a side salad for just £6 during the daytime on weekdays at Four Hundred Rabbits' relaxed Nunhead restaurant, and their great value Tuesday #HopSociety deal allows guests at both all-day venues to tuck into any pizza alongside any draft beer for a £10 meal package. Craft beer fans can take their pick from the weekly-changing lineup of 12 draft schooners (2/3 pint), cans and bottles, and cocktail lovers can take advantage of Four Hundred Rabbit's infamous £4 Negroni, the cheapest in the capital.
Commenting on their new limited edition vegan sourdough pizza, Four Hundred Rabbits' co-founder Daniel Edwards said:
“Our collaboration specials are all about celebrating London's vibrant and diverse food scene, and the people that make it so exciting. Faai and Lee at Greedy Khao have taken a deep knowledge of traditional Thai cooking and built on this to create something fresh that's uncompromising on flavour. This very much reflects our attitude at Four Hundred Rabbits with our London sourdough pizzas too - we can't wait to serve up this vegan Thai Massaman curry pizza and hope everyone loves it as much as we do!”
Greedy Khao co-founder Lee added:
“Faai's grandma in Bangkok counted massaman as one of her favourite curries, and loved to eat it with bread. She was Faai's main inspiration and mentor when it comes to cooking, and a lot of Faai's talents can be attributed to what she learned from watching her grandma cook as a child, and tasting all the amazing traditional Thai food she produced for their family. So, our massaman curry on top of Four Hundred Rabbit's irresistible sourdough pizza bases felt like the perfect pairing and brilliant way to honour Greedy Khao's first birthday!”

Why Four Hundred Rabbits:
“We love fermentation. The Aztecs also revered the process and worshipped both a goddess of alcohol and a god that discovered fermentation. According to aztec folklore these two got it together one night and created many offspring known as the 400 rabbit gods or centzon totochtin. These rabbit gods lived the good life, constantly going to parties and getting into mischief, alcohol was involved more often than not. At Four Hundred Rabbits we celebrate fermentation and two of the best things it has given us, pizza and beer. We think eating and drinking with friends and family should always be fun, and about good times. Much like the 400 rabbit gods did.”
