For a traditional Chinese New Year's Feast of award-winning Cantonese cuisine by Chef Lau Yiu Fai on February 17, the 2-Michelin star Yan Toh Heen presents an 8-course set dinner at HK$2,988 per person.
Chef Lau's Fireworks Dinner menu includes Barbecued Suckling Pig and Golden Sun-dried Oyster followed by Double Boiled Sea Cucumber with Fish Maw. Next is Wok-fried Lobster with Water Chestnuts and Fungus. Next comes Braised Whole Abalone (28 Heads) and Japanese Mushrooms in Oyster Jus, followed by Steamed Garoupa Fillet with Mandarin Zest and Red Dates. The feast continues with Braised Bamboo Piths and Sea Moss with Fungus. This is followed by Steamed Glutinous Rice with Crab Roe and Preserved Meat. For dessert, Sweetened Red Bean Cream with Glutinous Rice Dumplings and Chilled Red Date Pudding with Bird's Nest served with 1970 Aged Supreme Liu Pao Tea
Yan Toh Heen – Chinese New Year Fireworks Dinner Menu
The special "Fat Choy" menu (HK$1,888 per person) which includes traditional Lunar New Year delicacies is available from January 18 – March 4, 2018 (except the Fireworks Night on February 17).
The 5-course menu features Barbecued Suckling Pig, Golden Sun-dried Oyster and Crispy Lobster with Spicy Salt, followed by “Buddha Jumping Over the Wall” (a special Chinese New Year dish of Double Boiled Abalone, Fish Maw, Sea Cucumber, Conpoy,Morchella, Bamboo Piths, Mushrooms, Black Chicken and Sea Moss in Soup). Next is Wok-fried Wagyu Beef and Duck Liver with Spicy Sauce served in a Hot Stone, followed by Fried Multi-Grain Rice with Scallops, Chestnuts and Pine Nuts. For dessert, Sweetened Red Beans Cream with Sesame Dumplings and Bird's Nest
served with Wuyi Supreme Tea.

Newly awarded 1-Michelin star in the 2018 Michelin Guide to Hong Kong & Macau, Rech by Alain Ducasse celebrates its first Chinese New Year of operation with a 6-course Fireworks Dinner (HK$1,988 per person) by Executive Chef Stéphane Gortina.
The dinner starts with Marinated scallops-caviar / langoustine, coral-basil / gratinated cockles, followed by
Tiny spelt from Haute-Provence, cuttlefish-sesame-coriander. Next is Brittany lobster, salsify-chestnut. Followed by Truffled Camembert. To cleanse the palate, Citrus composition. For dessert, Chocolate from Alain Ducasse's Manufacture in Paris, crunchy praline.

On February 17, NOBU InterContinental Hong Kong will showcase its innovative new-style Japanese cuisine with an 8-course menu created by NOBU Executive Chef Sean Mell at HK$1,888 per adult (6:00pm-11:00pm).
The Chinese New Year Omakase menu starts with O-Toro Sashimi, Aoume Sauce / Ise Ebi Sashmi & Caviar, Umami Matcha Powder, followed by Zuwai Kani, Uni & Ikura / Nori Taco with Tamago Sauce.
Next is a Whole Ezo Awabi with Truffle Foie Gras Miso / Buri & Kue Sashimi, Aji Amarillo, Kinkan Dressing. Then comes a Deluxe Sushi Assortment, followed by Crispy Spanish Red Prawns with Salsa Verde and Onion Ginger Soy. At the Harbourside Buffet, enjoy the traditional Lo Hei (Prosperity Toss), a Teochew-style raw fish salad eaten especially at Chinese New Year. It is freshly tossed with strips of raw fish, shredded vegetables and a variety of sauces and condiments, along with other ingredients. Yusheng, which literally means "raw fish" is considered a symbol of abundance, prosperity and good health. Consequently, the tossing of the Lo Hei at Chinese New Year is auspicious.

Learn to Make Your Own Chinese New Year Savoury Kagoshima Thick Cut Daikon Pudding and Peanut & Sesame Dumplings
In preparation for the Lunar New Year, learn to make your own Chinese New Year Puddings under the expert guidance of Yan Toh Heen Executive Chef Lau Yiu Fai and his team. Chef Lau will demonstrate how to make this savoury seasonal treat, along with Peanut & Sesame Dumplings.

Chef Lau will introduce the ingredients for the Daikon Pudding as you enjoy dim sum and Chinese tea.
